Gabriel Quaglia and his Wife Sara opened up the shop in Feb. '07  with the
dream of opening up an Irish Fish & Chip Shop in Holyoke.
After working countless jobs for Pro Catering together they had decided a food service business
would be a great choice for the family.
Under Pro Catering Sara & Gabe met the needs of artists like:
Prince, Blink 182, Phish, Korn, Dr. Dre, Weird Al, and the Foo Fighters.
Sara loves to take care of the customers and Gabe loves to cook.
Gabe has worked in food service most of his life,
and had the pleasure of working under chefs such as:
Matthew Bilodeau
Unmi Abkin
John Kelly

Sustainability:
We try to implement sustainability in as many ways as possible. Here are some examples:

Local Buying:
We deal only with local purveyors and buy as much locally produced
or grown product as possible.
15% - 30%  of our food bill is from Locally produced or grown items.
For every $100 spent $73 stays in the local economy for locally owned stores, and only $43 stays local for chains.
By spending our money locally, and compounding it by buying local products, we help to keep
our local economy strong.

Composting:
We compost at Tramore Chip Shop. Composted materials make up 30%-50% of our waste.
Instead of going into landfills, this material is used to make a low cost natural fertilizer.
Chemical fertilizers are mainly derived from fossil fuels. This helps reduce our
dependence on foreign oil and extends the life of landfills around the region, saving tax dollars for municipalities.

Carbon Offsets:
We Pay monthly into the Bonneville Enviromental fund.  We get most of our electricity from the dam,
but we like supporting this kind of initiative.

Grease:
We supply our grease to people who use it for fuel.  We are now displacing 1250 gallons of fuel each year.
We are not only displacing this fuel but also saving money for people who collect it.

We support and love all our local trade groups:

The Name:
 Tramore is a town in county Waterford on the Southeast coast of Ireland.  My wi
fe and I enjoyed it immensely when we visited there.
They have some really good fish & Chip shops.
If you ever have a chance to go, we highly recommend a visit.

Here at the Tramore Chip Shop, we are committed to serving the highest possible quality. 
We use only the freshest seafood, seasonal fresh produce from local growers,
 Blue Seal® meats, and our secret batter recipe uses beer from Paper City Brewery®.
